Sunday is brunch day! We’ve all seen the avocado toast trend pop up within the last few years so I decided to take this new trend to another level. By adding a fried egg in the center of the bread, you get an extra treat when the egg yolk breaks and you can soak it up with the avocado toast. I’ve tried so many versions of avocado toast but I’d say this was the most fun to make.
This recipe is a team effort from my and my boyfriend, Andrew. He showed me how to make the egg-in-hole toast and I added the avocado twist to it. You can top this toast with whatever you like, I added goat cheese but feel free to experiment with different cheeses, vegetables, hot sauce, fruit- anything you can imagine really!
Timing:
- Preparation: 1-5 minutes (depending on what toppings you need to prepare)
- Cook Time: 4-5 minutes
- Total Time: 5-10 minutes
Ingredients: Makes 1 Serving
- 1 Slice of Whole Wheat Bread
- 1 Large Egg
- 1/3-1/2 of an Avocado (depending on how much you want to use)
- Goat Cheese Crumbles
- A Handful of Cherry Tomatoes, cut in halves
Directions:
Start by cutting a circular hole in the center of the bread.

Place the bread on a heated medium skillet. Crack the egg inside the hole on the skillet. Make sure the heat is on low or else your bread will burn.

Crack the egg in the bread hole
Cook on this side until the egg is almost fully cooked. A good way to check is to make sure the egg whites turn white inside the hole and rise up. Once cooked, flip the bread over with a spatula and cook on the other side for another two minutes.

Flip the bread
Take the bread off the skillet and spread the avocado on like butter. You can cut up slices of avocado to place on top as well (that’s what I did). Place any additional toppings you would like. I added some goat cheese and tomatoes to mine.
