
Take your grilled cheese to the next level
What’s your plan for lunch today? How about this sweet potato, spinach and feta grilled cheese? This dish takes our beloved grilled cheese to the next level by adding boosts of vitamin A and C, fiber and complex carbs. It also has two of my favorite foods- sweet potatoes and spinach, so not only is it good for you, it’s delicious too!
It’s easy to make and only takes a few minutes- you’ll even have time to make it for a healthy lunch before you leave for work in the morning!
Timing:
- Preparation: 4 minutes
- Cook Time: 3-4 minutes
- Total Time: 7-8 minutes
Ingredients: makes one serving
- 1-2 Slices of Whole Wheat or Whole Grain Bread
- 1/4 of a Sweet Potato, cut into thin slices
- 1/4 Cup Fresh Spinach
- A Handful of Feta Cheese, crumbled
Directions:
Poke holes in the sweet potato and microwave for 4 minutes. While you are waiting, wash the spinach and place on the bottom half of the bread. Once the sweet potato is finished cooking, cut it in half (save 1/2 for another use). Cut thin slices from the remaining half and layer on top of the spinach. Sprinkle the feta cheese on top of the spinach and sweet potato and place the top half of the bread on the sandwich.
Toast in a toaster oven for 3-4 minutes, until the bread is crispy and the cheese has melted.
