Happy Tuesday! Skillet meals are some of the quickest and easiest meals to make because all the ingredients can cook together at once on the stove. For this meal, I’ve combined ground turkey, brown rice and a ton of veggies for a delicious meal that makes enough servings to last the whole week!

- Cook Time: 20 minutes
- Total Time: 30 minutes
Ingredients: makes 5 servings
- 1 Pound Lean Ground Turkey
- 1/4 Red Onion, diced
- 1/2 Red Bell Pepper, chopped
- 1/2 Yellow Bell Pepper, chopped
- 1 Cup Cherry Tomatoes, cut in half
- 1 Zucchini, chopped
- 1/2 Cup Corn
- 2 Cups Fresh Spinach
- 3/4 Cup Black Beans
- 2 Cups Brown rice
- 1/2 Cup Cheddar Cheese, grated
- 1 Teaspoon chili powder
- 1 Tablespoon taco seasoning
- 1/2 Teaspoon Cumin
- 1/2 Tablespoon Garlic Powder
Directions:
Cook the rice according to the directions on the box. I used 10 minute brown rice but feel free to use any rice you prefer!
While the rice is cooking, heat a large skillet with oil and sauté the onion. Add the ground turkey meat and cook until no longer pink. Break up the larger pieces into small crumbles. Add the taco seasoning, cumin, chili powder and garlic powder to the turkey.
Once the turkey is cooked, add in all the veggies and stir everything in the skillet together. Cook until the vegetables are soft.
Add the cooked rice and beans to the skillet and combine all ingredients once again. Feel free to add more seasoning if you would like.
Let the skillet simmer for 5 minutes as the ingredients soak up all the flavors.
When you are ready to serve, top with cheese and enjoy!
