Lemon Garlic Chicken Kebabs

Summer time is grill time! There’s nothing better than a family barbecue when the weather is warm and the sun is out. Try these chicken kebabs at your next summer cookout- they are full of flavor AND fun to eat, a perfect combination for a summer BBQ!

Yo can try mixing these kebabs up with whatever veggies you’d like. I used bell peppers, zucchini and red onion. This recipe was inspired by a dish from The Recipe Critic, and can be found here. 

Timing: 

  • Prep Time: 10 Minutes
  • Marinating Time: 2-3 Hours
  • Cook Time: 15 Minutes

Ingredients: Makes 7 Kebabs

  • 1 Medium Zucchini, cut into 1/2 inch slices
  • 1 Bell Pepper, cut into squares
  • 1/2 Yellow Pepper, cut into squares
  • 1/2 Red Onion, cut into squares
  • 1 1/4 Points of Boneless, Skinless Chicken Breast, cut into cubes

Marinade:

  • 1 Clove Garlic, minced
  • 1 Tablespoon Lemon Zest
  • 4 Tablespoons Lemon Juice
  • 1/2 Cup Chopped Herbs, I used a combination of Basil, Parsley and Oregano
  • 1/4 Teaspoon Pepper
  • 1/2 Teaspoon Salt
  • 4 Tablespoons Olive Oil

Directions:

Mix the ingredients for the marinade together in a small bowl. Chop up the vegetables and chicken as instructed. Put the vegetables into a ziplock bag with 4 tablespoons of the marinade poured into the bag. Mix around the vegetables in the bag to make sure they are all covered with the marinade. Put in the fridge and let soak in the marinade for 2-3 hours.

Take the rest of the marinade and mix it in a separate ziplock bag with the chicken. Mix the marinade and chicken around until the chicken is fully coated. Place in the fridge and let soak for 2-3 hours.

After the chicken and veggies have marinated, place them on wooden skewers. This is the creative part- mix the veggies and chicken in any order you’d like! I tried to make mine as colorful as possible so I used a combination of all veggies on each skewer.

When the skewers have been made, grill on each side for 5-6 minutes, or until chicken is no longer raw. Make sure to turn the kebabs on the grill to cook evenly on all sides.

When the kebabs are cooked, squeeze some fresh lemon juice on top. Serve hot and enjoy!
