Kick off the long weekend in the best way possible- with a homemade healthy breakfast! I’ve wanted to make this dish for a long time so I figured I’d finally try it with my time off for the holiday weekend 🙂 This breakfast involves just two simple ingredients, an egg and an avocado (and if you have seen my posts before you know these are two of my favorite foods).
This dish is very easy to make, simply place an egg yolk into the center of an avocado and bake for 15 minutes. It tastes great and looks like you put a lot more effort into breakfast than you actually did!
Timing:
- Preparation: 1 minute
- Cook Time: 15 minutes
- Total Time: 16 minutes
Ingredients: Makes one serving,
- 1 Half of an Avocado with some of the insides scooped out
- 1 Egg
- A Pinch of Black Pepper
Directions:
Preheat the oven to 425 degrees. Turn your avocado half into a boat by scooping some of the inside avocado to create a wide center. (Don’t scoop it all out, though)
Crack the egg and be sure to keep the yolk intact. Gently place the yolk inside the center of the avocado. Sprinkle the top with pepper and any other toppings you would like.
Bake in the oven for 15 minutes, serve hot and enjoy!
This avocado/egg got me drooling!
