Summer calls for fresh food straight from the garden and I’m lucky enough to have parents who work so hard to grow fresh veggies all summer long. Since I moved to the city, it’s been hard to find affordable vegetables, so I definitely take advantage of my parents’ (free) garden as often as I can 😀 (Thanks mom and dad!)
This week, my mom gave me a giant zucchini. I wanted to do something different with it so I decided to turn them into patties (or pancakes if you will) By grating the zucchini and adding ingredients similar to a hamburger or turkey burger, I was able to create zucchini patties as a unique side dish for tonight’s dinner.
Timing:
- Preparation: 15 minutes
- Cook time: 10 minutes
- Total time: 25 minutes
Ingredients: (makes about 5 patties)
- 1 Large Zucchini, grated
- 1 Cup Breadcrumbs
- 2 Tablespoons Parmesan, grated
- 1 Clove Garlic, minced
- 1 Large Egg, beaten
- 2 Tablespoons Olive Oil
- A Pinch of Salt
- A Pinch of Black Pepper
Directions:
Grate the zucchini into a large bowl. Wrap the zucchini in a paper towel and squeeze all the liquid out and place back into the bowl.
Add the breadcrumbs, garlic, egg, parmesan, salt and pepper to the zucchini and mix together.
Form patties from the mixture to look like burgers. Place the patties on a heated skillet and cook for 3-4 minutes on each side, using a spatula to flip the patties.
Continue this process until you’ve used up the entire zucchini mixture. Serve as a side dish or a main dish and enjoy! (I put pesto on mine- it was delicious!)
