Zucchini Fries

I realize a lot of my posts lately have been about zucchini but I can’t help that there’s so many of them around in the summer! Zucchini is one of my favorite summer vegetables and there are so many ways to cook it that I never get bored. Luckily, I can still find affordable zucchini in the city (those vegetable stands on the corner of the streets are life savers) so I haven’t had to sacrifice my cooking since my big move.

The zucchini fries I made tonight are quick and easy- only requiring 4 ingredients! Try them next time you are craving french fries, for a healthier, but still delicious side dish.

Timing:

  • Preparation Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Ingredients:

  • One small or medium zucchini, cut into strips
  • 1 egg, beaten
  • 3/4 cup breadcrumbs
  • 1/4 cup grated parmesan

Directions:

Preheat the oven to 450 degrees. Cut the zucchini long-ways into strips and then cut the large strips into smaller pieces. zucchini-cut.jpg

In one bowl, mix together the breadcrumbs and parmesan. In another bowl, beat the egg. Take each zucchini strip and coat it in the egg mixture and then roll it in the breadcrumb mixture. Try to coat the zucchini evenly with the bread mixture. Place the strips on a baking sheet.

Cook the zucchini strips for 15 minutes or until the breadcrumbs are crispy. Take the baking sheet out of the oven and let sit for a minute before serving. I tried the zucchini fries with ketchup and a bit of lemon juice squeezed on top.
