Excited to announce I’m going on a road trip across the country with my best friend, Carson, this week! Road trips typically consist of drive thrus and rest stops with some pretty unhealthy snack options so my goal before we left was to whip up some healthier energy bites to keep us fueled during some of those long driving days! Energy bites are a great way to curb your hunger on the road and can be made in so many different ways. I chose to do a quick 3 ingredient recipe based on what I had in my kitchen but you can add tons of different ingredients to them including chocolate chips, chia seeds, flax seeds, raisins, honey and more!
Energy balls store well in the fridge and can be eaten for up to five days afterwards.
Timing:
- Preparation Time: 5 minutes
- Cooling Time: At least 30 minutes
- No cook time required
Ingredients: Makes 10-12 energy balls
- 1 Cup Old Fashioned Oats
- 2/3 Cup Organic Peanut Butter (I used Trader Joes’ Brand)
- 1/4 Cup Organic Maple Syrup (I used Whole Foods’ Brand)
Directions:
Mix the oats, peanut butter and maple syrup in a bowl together. Feel free to add any of the additional ingredients I mentioned in my first paragraph above as well.
If you find the mixture is too dry, try adding more peanut butter. Once the ingredients are evenly mixed, take small handfuls and roll into the energy balls. Place in a container and refrigerate immediately for at least 30 minutes. The energy balls will stay fresh in the fridge for up to 5 days. Enjoy!
