BBQ season is finally upon us! What’s your favorite backyard barbecue side dish? I love tater tots with my burgers but sometimes the regular tots are just… boring. So I decided to make these sweet potato tots for a more interesting, flavorful (and healthier) side dish. Veggie tots are a great substitution for regular tater tots, in addition to sweet potato tots you can also make broccoli tots, cauliflower tots, zucchini tots and more!

Ingredients: Makes about 22-25 tots
- One large sweet potato, peeled and grated
- 1/2 cup breadcrumbs
- 1/3 cup fresh parsley, minced
- 1 tablespoon fresh rosemary, minced
- 1 clove garlic, minced
- 1 egg
- 1/2 teaspoon salt
Instructions:
Preheat the oven to 400 degrees. While you wait for the oven to heat, peel and grate the sweet potato. Once grated, put the shavings into a bowl and add salt, let sit for 20 minutes so the salt can absorb some of the water from the sweet potato.
After the 20 minutes, place the sweet potato shreds on a paper towel and squeeze out the remaining water. Sweet potatoes are full of water so be sure to really squeeze the towel and get as much water out as possible.
Now let’s prepare the tot mixture! Add the egg, parsley, rosemary, garlic and breadcrumbs to the bowl and mix the ingredients together.
Take a little bit of the mixture at a time and form into tots. If you find the mixture isn’t sticking together well, try adding more breadcrumbs. Place the tots on a baking sheet lined with parchment paper.
Bake in the oven for 15-20 minutes, take the tots out and turn them over and then cook for another 15-20 minutes to make sure they cook on all sides. Serve with your favorite dipping sauce and enjoy!
