Hangry Chef Tries: Hello Fresh’s Wasabi Zinger Salmon

Ever tried the Hello Fresh food delivery service? I received a gift card so I decided to give it a go to share with all of you! Similar to my previous post about Plated, I’m going to write about my experiences cooking Hello Fresh’s recipes and share my final opinion. All recipes belong to Hello Fresh and are not my own.

It’s been a while since I’ve been able to prepare a home cooked meal. Working full time and taking grad school classes part time has really crammed my schedule! I feel lucky to have a service like Hello Fresh deliver ingredients right to my door so I don’t have to spend time myself at the grocery store, deciding what to make.

I started this week cooking Hello Fresh’s Wasabi Zinger Salmon. It was a very simple meal to make, only taking about 30 minutes, and tasted DELICIOUS. Hello Fresh delivered my box just this afternoon so the ingredients were as fresh as if I had bought them myself in the grocery store. My boyfriend and I cooked this for Sunday dinner and we cannot wait to make it again!

Timing:

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Ingredients: makes 2 servings

  • 10 oz Salmon
  • 1/2 Cup Jasmine Rice
  • 6 oz Green Beans
  • 2 Scallions
  • 1 Lime
  • 1 Packet Veggie Stock Concentrate
  • 1 Tablespoon Sesame Seeds
  • 4 Tablespoons Sour Cream
  • 1 Teaspoon Wasabi Paste

Directions:

Start by cooking the rice. Bring 1 cup of water and the veggie stock concentrate to a boil. Add the rice and then reduce heat and cover. Cook for 15 minutes, until rice is tender.

Wash the scallions and slice thinly. Make sure to separate the whites from the greens. Zest the lime and then cut into 4 wedges.

Next, make the crema to top the salmon. In a small bowl, stir together the sour cream, lime zest, lime juice and wasabi paste. You can add as much wasabi paste as you’d like. Personally, I don’t like spicy food so we decided to add just a very small amount.

Now it’s time to cook the salmon. Drizzle some oil in a pan over medium-high heat. Season the salmon with salt and pepper and place on the pan skin side down. Cook until the skin is crisp, about 5-7 minutes. Flip the salmon and cook on the other side until done, about 1-2 minutes.

Cook the green beans either by boiling them or in the microwave. The Hello Fresh green beans came in a microwavable bag but if you would prefer to boil them, place them in a pot of boiling water and cook for about 3-4 minutes until tender. Once cooked, toss in a small bowl with olive oil and the sesame seeds until evenly coated.

Before serving, fluff the rice and add the white scallions. Season with salt and pepper. Place a dollop of the crema on top of the salmon and sprinkle the scallion greens on top. Serve and enjoy!
