Who doesn’t love a good pizza? These eggplant pizzas are a healthier take on America’s favorite food- you get all the same flavors of regular pizza without feeling bloated afterwards. These pizzas can be customized to include all your favorite toppings. Try adding mushrooms, pepperoni or onions for a little extra flavor!
I have Pinterest to thank for this recipe. There are so many different ways to make eggplant pizzas- I combined a few ideas to create what you see in the above picture. I love getting creative in the kitchen, don’t be afraid to stray away from the recipe and experiment a little- that’s what makes cooking so fun!

Ingredients: Makes 4 servings
- One Medium or Large eEggplant
- 3 Teaspoons Olive Oil
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 1/4 Teaspoon Dry Basil
- 1/2 Cup of Tomato Sauce
- 1/2 Cup of Spinach
- 3/4 Cup of Cherry Tomatoes
- 4 Slices of Mozzarella Cheese (or 1/2 cup of shredded cheese)
- Additionally, you can add basil on top
Begin by preheating the oven to 425 degrees. Cut the eggplant into four even round slices. Brush the eggplant with the olive oil and sprinkle with salt, pepper and basil. Place the slices on a baking sheet and bake for 10 minutes, turning them over at 5 minutes.
Take the eggplant out of the oven and spread the tomato sauce on the top side. Place the slices of mozzarella cheese on top of the sauce. Layer the spinach on top of the cheese. Cut the cherry tomatoes into halves and place them on top of the spinach and cheese.
Place the eggplant back into the oven and bake for 5 minutes, until the cheese is melted. Feel free to sprinkle dried basil or red pepper flakes on top as an extra garnish. Enjoy!
