Shrimp, White Bean and Avocado Salad

Beautiful and delicious!

As the weather (attempts) to get warmer, I’m starting to make more of my favorite summertime meals 🙂 This salad combines some of my favorites- shrimp and avocado- with some other fresh ingredients to create a light, colorful and delicious meal. Beans are a great addition to any salad because they are packed full of fiber and protein- giving you an extra boost of nutrients! Feel free to top this with any dressing you’d like, I personally used a raspberry vinaigrette.

Timing:

  • Preparation: 10 minutes
  • Total Time: 10 minutes

Ingredients: Makes one serving

  • 2 Cups Fresh Arugula
  • 3/4 Cup Baby Shrimp, cooked
  • 1/2 of an Avocado
  • 3/4 Cup Cherry Tomatoes, sliced in half
  • 1/3 Cup Red Onion, diced
  • 1/2 Cup Cannellini Beans, drained

Directions: 

Combine all ingredients in a bowl and mix together well. Top with any dressing you’d like and enjoy!
