Mother’s Day Minestrone Soup

Happy Mother’s Day to all the mothers out there! This weekend, I cooked with my mom for a special Mother’s Day post! Since the weather has been pretty rainy and cold lately, we opted for a comfort food classic: soup 🙂 Mom and I took inspiration from Rachael Ray’s 30 Minute Meals cookbook and made our own version of her Big Beans and Greens Minestrone Soup (found on page 135 for those who have the book at home).

This Mother’s Day, take the time to cook with (or cook for) your mom! She’s been cooking for you your whole life so she definitely has some cooking tips and tricks up her sleeve!

Timing:

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Ingredients: makes 6 servings

  • 1 Cup Ditalini noodles
  • 1 Clove Garlic, minced
  • 1 Small Yellow Onion, chopped
  • 2 Carrots, peeled and diced
  • 2 Stalks of Celery, chopped
  • 1 Can Kidney Beans, drained
  • 1 Can Chickpeas, drained
  • 1/4 Pound of Green Beans, cut into thirds
  • 1 Bunch of Spinach, rinsed and cut
  • 1 Can Diced Tomatoes, drained
  • 14 Ounces Low Sodium Chicken Broth
  • 2 Turkey Sausage Links
  • 1/2 Teaspoon Fresh Rosemary, minced
  • 1 Bay Leaf
  • 1 Small Parmigiano Rind
  • Salt and Pepper to taste

Directions:

Start by cooking the Ditalini noodles al dente, about 10 minutes. While you wait for the pasta to cook, prepare the vegetables and heat olive oil in a large soup pot. Add the minced garlic and cook until soft, then add the onion, carrots and celery. Let the vegetables cook for about 5 minutes.

Once the vegetables are a bit soft, add the sausage and let it brown for about 5 more minutes, stirring consistently.

Add the chicken broth, kidney beans, chickpeas, spinach, green beans, diced tomatoes, rosemary, bay leaf, parmagiano rind and salt and pepper to the pot. Bring to a boil and the reduce heat to a simmer for about 10-15 minutes.

To serve, place a half a cup of Ditalini in a bowl and cover with soup. Sprinkle with additional cheese if desired and serve with warm bread. Enjoy!
